Tater cakes are simple comfort food. I don't know where they came from, but I know that people in Philadelphia, Appalachia, and parts of the South eat them up.
You will need:
*Leftover mashed potatoes--not the instant kind, but real honest-to-goodness leftover mashed potatoes that you will cry over if you have to throw them away.
*Flour
*Eggs
*Chopped onion
*Milk
Your job here is to mix these together, make patties, fry them up in a cast-iron skillet and enjoy them. You can make these in about 20 minutes.
It helps me to fry my onion first, but not everyone does that. It also helps me to fry these in vegetable oil and use my spatula to press out the grease once they're nice and brown, but some people use paper towels. Use a big spoon to put them in your pan. They need to be brown on both sides, so keep your heat on medium and only flip them once or twice.
I'm not giving precise amounts here because I eyeball what I need as I go. You might want to have 1 cup or more of flour at hand and 2-3 eggs for a decent (4 cups or so) of mashed taters. Use the milk to make it a little moist. And you may want to have some things on the side to add in, like peppers or bacon or cheese. Cheese seems kind of messy to me, but some folks insist on it.
