You will need:
A double boiler
A pie shell
5 egg yolks and whites separated
One-half cup of sugar
2 tablespoons of sugar
1 large lemon--juice and the grated rind separated
Add each ingredient except the egg whites and the 2 tablespoons of sugar separately. Cook the egg yolks, sugar, juice and rind in a double boiler until thick. Let it cool.
Beat the egg whites 'til stiff, add half to your cooked mixture and then put that into your pie shell. Add 2 tablespoons of sugar to the remaining whites and cover the pie with it. Bake at 350 'til the pie is golden brown color. Keep an eye on it as it bakes. Some folks cover these as they back, but I never did.
