No Bake Skillet Cookies
You're going to need:
1 stick of margarine
1 cup of sugar
1 beaten egg
1 T of white syrup (Karo is the easiest to find, I think)
1 cup of chopped up nuts
1 cup of chopped up dates
2 cups of Rice Krispies
1 t of vanilla
Coconut pieces
Melt your margarine in the skillet and stir in your syrup, sugar, and the egg. Add your nuts and dates. Cook on low heat for about 12 minutes. Remove from the het and let it cool a bit. Stir in your Rice Krispies and the vanilla. Make balls about three-quarters-of-an-inch thick and roll in your coconut. Drop on waxed paper and put them in the fridge.
NOTES: As with another no-bake recipe that I posted here, it may be best to want to start with cold ingredients by refrigerating everything for 30 minutes before shaping and creating. As for the syrup, I'm no9t a fan of Karo if something else is available. I know that folks make an easy simple syrup by mixing equal amounts of sugar and water and cooking over medium heat 'til it boils and then saving it in a jar in the fridge. Other folks make a thicker syrup by whisking one stick of melted butter, microwaving a can of evaporated milk in a microwavable glass container of some kind, adding one cup of sugar to the milk as soon as it comes out of the microwave, whisking the sugar and milk together to mix in the sugar, adding that mix to the melted butter and mixing that in a saucepan 'til it gets thick and boils. That last recipe is work, and you have to be careful not to whisk the syrup on the stove too long or at too-high heat. With either one you may not get something that is thick enough or holds well. I have not tried either of these, but people do this all the time with good results, or so I've heard. It seems easier to just use store-bought. You can find coconut in a grocery store's baking section, but it might be fun trying the coconut syrup or coconut milk you find in other sections in some areas.
