Sauerkraut And Bean Soup--Great for the winter!

This is another cold winter favorite in mining communities and steel towns. I think that it comes from the Balkans. It's really easy to make.

For best results you will need these:

One-half pound of dried pinto beans that have soaked over night. That's a lot of beans!
One-and-one-half pounds o pork that has cooked by itself the way you like it. For this recipe you probably want a plain pork dish that cooks for a long time.
2 bags of sauerkraut, cooked and drained, or maybe more if you like sauerkraut
One-half of of a cup of barley or a good barley stand-in

Drain the beans, add water and cook them covered for about one hour. add the pork, sauerkraut, barley and some salt to taste and let all of that cook together for about 30 minutes. Done!
