Potato Casserole

Making casseroles should be a required subject for everyone in school. And in some parts of this country it may be.

This one is pretty easy. You will need:

2 lbs. frozen hash browns thawing out
One-half stick of butter, melting
1 t. of salt, or less
One-quarter t of pepper, or more
1 pt. of sour cream
One-half of a cup of of chopped onion
1 10 oz. can of cream chicken soup
10 oz. of sharp cheddar grated
2 cups of cornflakes crushed
One-quarter cup of margarine, melting

Mix your hash browns and butter and stir them together with your salt, pepper, spur cream, chopped onion, chicken soup, and cheese.

Put all of that in a 9 X 13 pan or baking dish.

Sprinkle on the cornflakes and the margarine on top.

Bake it all at 350 for about 45 minutes.

Now, there is some intentionality to this recipe. You can make it for you and yours and have a good meal or side dish. That's just fine. But you can also go down to about any thrift store, buy a casserole dish cheap, and take this around to your neighbor. You may or may not get the dish back, but it's cheaper and better than buying those tin things at the store and the odds go up that you will get a return visit and meal if you put the food in something nice. Here's another idea. Do you have anyone in your neighborhood who is hitting the bottle or the needle, or do you pass houseless people on the street and worry for them? Why not drop off a warm casserole with some plasticware and some water or coffee on one of these cold days? Check in on folks. Love one another. Nothing says love like a casserole. If someone else didn't say that first, they should have.
