Cicvara!

Cicvarra is an easy-to-make dish that can best be described as a kind of mush or porridge. The dish originates in the Balkans. There are many ways to make it. Here is the most simple recipe that I know.

You will need:

* 1 lb. of cottage cheese
* One-half-pound of unsalted butter
* 3 cups of water
* 1 tsp. of salt
* One-and-one-half-cups of yellow cornmeal
* 1 well-beaten egg
* A wooden spoon

Put the water on the stove, add your butter and cottage cheese, and bring it to a gentle boil. Lower the heat and SLOWLY pour in your cornmeal and add your salt. Continue to cook and stir for about 45 minutes at low heat. Add your beaten egg and stir fast with your wooden spoon 'til the mixture floats in the butter.

Some people serve this hot with a little cream and some folks eat it cold with yogurt.
