This is an easy recipe. It's a good side dish but I have been known to just have this for supper. it will go well in a lunch bucket.
Get a large casserole. Slice up or cube some potatoes (don't use red potatoes for this recipe) and put the slices at the bottom of the casserole. You can add some mayonnaise and garlic powder here if you like. Slice up tomatoes and put them on top of the potatoes. Do the same with zucchini, putting your slices on top of the tomatoes. Now, I like putting sliced mozzarella cheese on top, but some people prefer Monterey Jack, cheddar, parmesan, or Colby. Good seasonings for this might be thyme or paprika. Some people stir in chopped up cooked broccoli or bacon bits. Put your casserole in the oven at 350 for about one hour. Some people will cover it with foil while it bakes, but I just use the casserole top.
