I think that this is one of those easy-to-make recipes from Appalachia and the Pennsylvania coalfields but I might be wrong. This recipe comes from Suzy Belle writing on the Appalachian Americans Facebook page. I have seen more complicated recipes for whipping cream candy in regional cookbooks.
You're going to need:
* Two-and-one-half cups of whipping cream
* Four cups of sugar
* Three-quarters-of-one-cup of white corn syrup
* One tsp of vanilla
* One cup of chopped nuts
* 1 cup chopped nuts
Boil your cream, sugar, and syrup to the soft ball stage. Remove from heat and let set until cooled. Add vanilla and nuts. Beat hard until creamy. Pour into a buttered 13x9x2-inch pan. Cut into small squares after candy is completely cooled.
