You will need:
* 2 cups of flour (Eve uses whole wheat flour)
* 1 cup of sugar (she uses one-half brown sugar and one-half white sugar)
* One-and-one-half tsp of baking powder
* 1 tsp of salt
* One-half tsp of baking soda
* Three-quarters-of-a-cup of orange juice
* 2 tbls vegetable oil
* 1 tbls of grated orange peel
* 1 egg, well beaten
* One-and-one-half cups of fresh packaged cranberries very coarsely chopped (Eve says that she usually just chops some of them and puts the rest in whole)
* One-half cup or more of chopped walnuts
Preheat your oven to 350. Grease and lightly flour a 9 X 5 loaf pan. Mix, flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, oil, orange peel and egg. Mix until well blended. Stir in cranberries and nuts.
Spread evenly in the loaf pan. Bake for 55 minutes or until a toothpick or knife inserted in the center comes out clean. It usually takes longer than 55 minutes. Eve says that she usually turns the oven down a bit and keeps baking so as not to burn the top. Cool on rack for 15 minutes. Remove from pan and cool completely. Makes 1 loaf.
