Skillet Fried Corn!

I want to tell you that this recipe is fancy health food compared to some of what I have put up recently. Don't look down on fried skillet corn. It makes a great side dish or a good snack on a cold day.

You're going to need;

* 4 or more slices of bacon
* 1 small green pepper chopped up
* One-quarter-of-a-cup of finely chopped onion
* 3 cups of fresh corn from a cob---or be like me and do this with 3 cups of that fire-roasted whole kernel corn that you can get in the supermarket. Just let the canned corn dry out some.
*One-quarter-teaspoon of salt

Fry your bacon 'til its crisp, pull it out and leave the drippings in the pan. Crumble the bacon up or slice it into small bits and just put it aside. Add your green pepper and onion to the drippings and cook that over medium heat 'til its all crisp but kind of tender. Stir in your corn and then your bacon bits and let it all cook for not more then 10 minutes. If you're using the canned corn you will not want to go near that long because you want this kind of crunchy if you can get it there. Add your salt and stir that in at the end. Done!
