Brandy Sauce

No, this isn't for Lent.

Yes, it will go well with cakes, ice cream, and steamed hot rice pudding.


Get a double boiler. Add your water to the bottom pan and get that heating up.

Put in one-half pound of butter, one pound of brown sugar, the juice and the finely chopped up rinds of two large lemons, at least one-half of one cup of brandy, and two egg yolks.

If you have an egg beater, use that to mix everything together over hot water. Otherwise, use a mixer of some kind or put yourself to work mixing everything together really nice over the water as it gets hot.

You want it thick, really thick. And you don't want it lumpy; the sugar needs to break up.

When it's thick and hot, serve it over your cake, spoon a little over some ice cream, or have it over your rice pudding.
